Peru: Arequipa is home to more than 2,000 varieties of potatoes with high nutritional value

May 30th is National Potato Day, and in Arequipa, more than 2,200 varieties of this valuable tuber are cultivated. In the region, approximately 9,600 producers dedicate themselves to its harvest, occupying more than 10,600 hectares of land with an average yield of 36 tons per hectare.

This food stands out for its nutritional value and its importance in the local diet. Carmen Rodríguez, a specialist and professor of Nutritional Sciences, highlighted the nutritional qualities of the potato, alluding to its high content of carbohydrates, proteins, vitamins, and minerals. She especially emphasized its antioxidant capacity as one of its main advantages. Furthermore, she explained that the tuber is rich in fiber, recommending its consumption with the peel, especially for those suffering from constipation, as it could be a healthier option than using laxatives. Rodríguez also highlighted its industrial versatility, noting its use in beverage production and cosmetic products such as skin-lightening creams.

In this context, the Regional Festival and Fair of Women Entrepreneurs will take place on May 30th and 31st. The event will be held outside Los Ccoritos Park, in the José Luis Bustamante y Rivero district, and will be open to the public from 6:00 a.m. to 5:00 p.m.
